Chocolate Covered Strawberries
Great for a Summer Dessert
5 pints of fresh strawberries
1 small bag semi-sweet chocolate chips
1 tbl. Olive oil
Wash strawberries and lay out to dry 2-3 hours before dipping. It is important to be completely dry to hold the chocolate.
Fill any deep pan 1/2 to 3/4 full with water and boil, place stainless steel bowl so that bottom touches boiling water (a double boiler). Once the water is boiling add the chocolate and oil. Dip strawberries almost halfway and lay on cookie sheet lined with wax paper. Put in refrigerator to harden the chocolate and serve. This is a great dessert this time of year when the strawberries are in season.
