Breakfast Tacos
yield: 2 tacos
2 Eggs
1/4 of a Avocado
2 slices of Bacon - chopped
1/4 cup of Pico De Gallo (chopped onions, tomato & cilantro)
1/8 cup of Feta Cheese
2 small Flour tortillas
Scramble eggs with avocado, bacon, & pico de gallo - split - and fill warm flour tortillas - top with feta cheese and serve salsa and Spanish rice on the side.
